Roasted broccoli & walnuts puts new spin on the old favorite broccoli salad. The sweetness of the apples & the savory garlic mix perfectly with goat cheese. Make ahead for a get together or take along on a trip.
Spread broccoli florets w/ crushed garlic & walnuts in a single layer on a cookie sheet. Sprinkle with salt and toss with coconut oil. Roast for 20 mins @ 350 degrees stirring half way. Add them to the goat cheese mixture while warm
In a large bowl mix goat cheese and balsamic vinegar
Add roasted broccoli and walnuts to goat cheese mixture.
Chop apple, onion, and bacon and mix with cheese mixture.
